Stilton cheese is made in just three counties - Derbyshire, Leicestershire and Nottinghamshire. Amazingly, cheese made in the village of Stilton - which is in Cambridgeshire - cannot therefore be called Stilton! There is a cheese called Cornish Yarg which comes from a recipe found in a farmer’s attic. The farmer was called Mr Gray... you’ll notice that Yarg is Gray backwards! Limburger cheese is known as having a particularly pungent odour. Amazingly, the bacterium that causes this - brevibacterium linens - is also responsible for smelly feet!

The earliest archaeological evidence of cheesemaking we have is found on the walls of Egyptian tombs dating back to 2000BC. Early cheese in Africa and the Middle East would have been very different to most types today. To stop it from going off in the hot environment, a great deal of salt would have been needed to preserve it, making the taste extremely sour. It was not until cheesemaking spread to Europe that the cooler conditions allowed cheeses to age, thus giving us a greater range of flavours.
